Hillbilly Salsa in Tomato Season






I am surrounded by tomatoes of all shapes, sizes, and colors. But my favorite is the Hillbilly yellow with its pretty red stripes. This tomato looks good and tastes great. So after making some homemade sauce to freeze, I decided to try making salsa with the remaining Hillbillies. My friend and fellow cook, David, had just shared some of his famous salsa with me so I asked him for his recipe. He used a Tyler Florence recipe he found on the Food Network website and I don't think a salsa recipe could be more perfect. Salsa is probably one of the easiest and healthiest foods we can eat. I put mine on top of my green salads, in my scrambled eggs, and of course on crackers or corn chips. I know you will enjoy making this and the best news is that is costs a fraction of what you pay in the store. With those savings, I bought myself a nice treat.



Salsa


4 ripe tomatoes, chopped

1/4 red onion, chopped


1 jalapeño, minced


8 cilantro sprigs, chopped


3 garlic cloves, minced


Juice of 1 lime


1/4 cup olive oil


1/2 teaspoon salt



Directions

In a mixing bowl, combine all ingredients together. Toss thoroughly. Let stand


 15 minutes before serving.
