Overnight Cinnamon Oatmeal




I rarely blog a breakfast but this fast and healthy and let's not forget delicious oatmeal recipe is the best. I no longer cook my oatmeal in the warmer weather but now soak the old fashioned oat flakes in yogurt, maple syrup, and cinnamon and let it sit covered in the refrigerator overnight. In the morning it is ready to go. I add a few strawberries, some toasted coconut, perhaps banana slices on top and it gives me plenty of morning energy. Enjoy~

enough for two servings

Mix all together

2/3 cup old fashioned oats
1/4 to 1/2 tsp cinnamon
2 tsp maple syrup
6 oz of plain or vanilla yogurt

Cover and put in refrigerator overnight

Top with

Fresh or frozen ( thawed to room temp) strawberries
toasted coconut ( heat in oven for a minute or two but watch carefully, they burn quickly. )
