Happy Birthday Paella





The sun was shining, it was warm, and it was my son's birthday.  We asked him to choose a meal and we would make it for him. He chose a delicious Paella from the Yotam Ottolenghi cookbook entitled Plenty. I had never made a Paella before but enjoy a good challenge and besides I had three other experienced cooks  ( his sister, his brother-in-law and his girlfriend) to help me. We shopped for all the ingredients and this being a vegetarian Paella, the list was long. The afternoon was prep time and we cut, sliced and diced. Then we lined everything up on the counter in the order that they must be added to the process. By doing all this ahead of time, we had time to relax before dinner. When it came time to pull it all together, it was simple. Although this recipe may seem a bit daunting at first, it is truly easy and as we found out absolutely scrumptious. Will I make it again? Yes, Yes, Yes.

P.S. We also cooked white fish separately on a salt block and that added a nice dimension to the meal.
