Warmed Arugula and Swiss Cheese Sandwich




This is not the post I had intended today but as I was writing my other post I suddenly became hungry and needed to eat lunch. As the nursery rhyme said, " the cupboards were bare" so I pulled out what I had and tossed together a sandwich. It turned out so delicious that I had to blog it. If you have never tried warmed arugula, do so now. It sends your taste buds to paradise. 


Warmed Arugula and Swiss Cheese Sandwich

A handful of baby arugula
2 thin slices of Swiss cheese
1/4 of an apple sliced very very thin 
1 TBS of toasted walnuts finely chopped ( optional but what a joy to include)
1tsp of olive oil
1 tsp of honey mustard


I first toasted the walnuts in a flying pan with the oil for about a minute or two, watching closely and stirring often. I then sliced open the pita bread and spread the mustard lightly on both sides. I placed the Swiss cheese on one side, then topped that with the apples and then the arugula. I covered it with the other slice. I put it in the toaster oven on 350 for about three minutes or until Swiss cheese melted and top of pita bread browned slightly. Please watch carefully because pita bread cooks quickly and you do not want it crispy but lightly browned. Enjoy…Oh and I sliced the rest of the apple to eat along with it.
