Switch What?


 Okay, when my friend text me to try this new beverage Switchel, I admit that I text her back saying sure sounds good. But I had my doubts. I am a devoted Kombucha drinker and how could this compete I thought. Then she invited me over for a tasting at her New Year's Day Birthday Brunch. Switchel had me at one sip. And after drinking a full glass, I could seriously sense the energy raging in my body. I sat up straighter, had sharper conversations, and I think my wrinkles even disappeared. Although I might be exaggerating a tad, this delicious and healthy refreshing drink is worth making. You can even mix in a splash of seltzer water to jazz it up. All I can say is, " Cheers and Happy New Year" as I raise my glass of Switchel to you.

5 to 6 cups water
3/4 cup apple cider vinegar
1/4 to 1/2 cup Mead's Maple Syrup
2 TBS of fresh grated ginger
the zest of one lemon
a pinch of salt if desired
I also put in 1/4 to 1/2 of rolled oats

Mix all ingredients in a large saucepan and bring to a simmer on medium heat. Do not let it boil. Remove from heat and let cool. Pour it into a bowl and cover. Refrigerate for 12 to 24 hours. Then strain through a fine mesh strainer into a pitcher or canning jar. Keep refrigerated. And enjoy…
