Quinoa Summer Salad
Dressing
1/2 cup evoo
1/4 cup red or rice vinegar
1 lemon, juiced
1tsp sea salt
1/2 tsp pepper
1 TBS maple sugar granules or maple syrup
Salad
1 1/2 cups quinoa cooked according to directions
1 small red onion
1 tomato cored, seeded, and diced very fine
1/2 cup to 1 cup parsley chopped ( I use a half cup but if you like parsley then chop away)
1 cup fresh kale finely chopped
1 cup cooked edamame beans
Mix all ingredients together and add the dressing. It is best if you let it rest for an hour before eating but this is not necessary if you are starving and need to eat immediately. I have done both as this salad is a staple meal in my house and I make it a lot. Also be sure to experiment with portions and additions. With this salad anything goes. Well almost anything…I still won't hop on that bacon trend:) Serve with an easy citrus salad of baby greens, fresh orange, radish, and a favorite cheese.
